Everything Cookies

(adapted from Alex Witchel’s recipe)

Ingredients

1 very ripe banana
1/3 cup canola oil
2/3 cup sugar
1 teaspoon vanilla extract
3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 cups oatmeal (not instant)
1/2 cup chocolate chips
1/2 cup chopped walnuts
1/2 cup dried cranberries or raisins
1/2 cup coconut

Instructions
  1. Preheat oven to 350 degrees.  Grease baking sheets with softened butter.  In a mixing bowl, mash banana well.  Add oil, sugar, vanilla, and blend thoroughly.  Add flour, baking soda, salt and cinnamon, and mix until moistened.
  2. Add oatmeal, walnuts, chocolate chips, cranberries/raisins, and coconut.  Mix together, making sure oatmeal is well incorporated.  If it looks too slippery, add a tablespoon or two more of flour.
  3. Using clean, wet hands, re-wetting as needed, roll dough into balls slightly smaller than a golf ball, about an 1 1/3 in diameter.  Place 2 inches apart on cookie sheet, and flatten slightly.  Bake until lightly browned, about 12 - 14 minutes.  Remove from heat, and allow cookies to rest for a few minutes before lifting off cookie sheet with a spatula, and placing on a wire rack to cool completely.
